The artisanal salting and smoking methods that have been handed down from generation to generation are one of the company's strengths.
We use only wild and responsibly farmed fish from recognised fish farmers. In the heart of Hong Kong, the fish is processed and then filleted by hand, followed by curing using traditional methods and different types of natural wood shavings, and finally salting.
The finest quality meats come from the healthiest of animals, we only work with top farms and suppliers. The welfare of the animals is imperative, our meats are organic and hormone free, providing the finest quality cuts, sausages and cold cuts.
